I am the wine buyer for Builders Arms Hotel. After working in the Melbourne wine industry for seven years my friend Penny Vine (Cutler & Co.) recommended I apply for the role. I love the atmosphere of the pub, offering great service and wine in a relaxed environment. I’m inspired by Leanne Altmann our Beverage Director, and all the staff I work with on the floor who continually inspire me to share new and exciting wines. Trader House offers continual growth and development within my role which is very rewarding.

I’m a chef at Marion Wine. The values the Trader House holds aligned with my personal values so the decision to work for the group was a simple one. The best part about my job is working within such a cohesive, collaborative and supportive team to deliver the highest quality experiences to our guests, something that I get to be part of everyday.

My Head Chef and Sous Chef inspire me to work with passion, quality and diligence while fostering and encouraging myself and the team to succeed in both the day-to-day restaurant operation but furthering our knowledge to be the best in our craft. Trader House pushes the boundaries and expectations of hospitality to another level, encourages its employees to learn, grow and flourish. I am proud to be a Trader House employee.

I work for Cumulus Inc., as a commis chef, and joined in March 2021. I report to James Cornwall, the head chef - he inspires us all to work as a team and succeed in the kitchen without having to yell or become angry, but rather by supporting one another so that we may form the best team possible to provide the finest service to our customers.

The best part of my job is when everyone is competing while also being encouraging. Every day, we were challenged to be the best version of ourselves. No pressure, no diamond, as my chef once quipped. Trader House makes an investment in their employees by caring for every one of us individually. They provide us with numerous benefits in order to recognise our efforts.

For a wine person, there’s just not a lot of other places that have such a dedicated team of wine professionals that you can be a part of. I also like that all our venues have their own identity and story, and we can operate with autonomy. I love working with other dedicated, excellent people. Some of whom have become my closest friends. For me the most important thing about our company is that at the highest level, it’s run by restaurant people, not a corporate office.

One of the great strengths of Trader House is its pull for talented staff, across all venues. Throughout my time in the group I’ve worked with some of Australia’s most accomplished sommeliers, and all have shared their unique perspective on great wines so generously. I’m inspired by the variety of voices and opinions on wine and wine service within the group, all underpinned by knowledge and appreciation.

I’ve worked in a range of venues around Melbourne and Australia, and I am yet to find another organisation that provides structure, development and mentorship like Trader House. The restaurant is structured to crowdsource ideas for development from the staff. Because of this, we are given a voice to say what we need and are then given the tools we need to succeed.

I love the banter, energy, camaraderie and organised chaos of service! All the hard work that goes into making that elegant hiss of a champagne cork for a 50th birthday, or a guest blown away by that perfect bottle of Burgundy. Working just outside my comfort zone in an environment that is nurturing and fun but still professional is why I enjoy going to work every day. It’s a challenge — but my growth even in this short time is exponential and I’m very thankful.

I have been with the group for over 5 years. I started at the bottom, and with the help of great mentors and peers I progressed to where I am. The best part of my day is when service is about to start, and the team is looking sharp, focused and ready for action. The feeling in the room is indescribable. I can proudly say that working for Trader House has moulded me into the person I am today. Yes; there are traits of certain mentors I always strive for, but at the end of the day, this group has always given me a chance to show what I have.

The best parts of my job would have to be learning new things that I feel improve my skills and that I can put to a practical use. And the end of a busy service that went well. I feel like there’s something you can learn from everyone you work with. A lot of the people I work with inspire me, ranging from the kitchen hands to the head chef.
