Tackling food waste in an innovative way

We all know that food waste is a big problem. Trader House’s Sustainability Action Committee has been working hard to come up with many solutions to help lessen our environmental footprint and we’re so excited to see initiatives come into action.

We’ve recently partnered with Melbourne-based Bardee, who are on a mission to reshape the global food system, by feeding food waste to black soldier fly larvae, who then turn it into a high protein organic fertiliser, and pet food. It’s a world-class vertical farming system that prevents food waste from turning into methane and recycles the nutrients back into the food system, and Bardee are now the largest insect breeding, protein and fertiliser producer in Australia. This first-of-it’s-kind partnership with Trader House represents an exciting new chapter, enabling carbon positive dining choices in Australia.

The team at Bardee, along with Trader House Project Manager Anna Augustine and Cumulus Inc. Junior Sous Chef James Grant recently spoke to Natasha Mitchell at ABC Radio National’s Science Friction program about their innovative way to tackle food waste.
