Tom Sarafian joins the Cumulus Inc. kitchen for a fortnight
A two week residency from March 2nd - 13th
Tom Sarafian is one of the city’s most inspiring chefs. The entire team at Cumulus Inc. couldn’t be more excited to host him in the kitchen for two flavour-fuelled weeks.
Tom is full of heart and continues the ingrained traditions of a family where food is a religion. His menu encourages curiosity and spontaneity - layering smaller snacks with shared plates and seasonal gems that burst with the aromatics, texture and soul that Tom is so renowned for.
“I’ve missed cooking in Melbourne’s CBD so much in the past year since Bar Saracen closed, and I’m looking forward to bringing some of my favourite dishes back to the city, as well as some exciting new ones I’ve been working on.”

Join us as Tom shares family recipes, and dishes honed from years of travel throughout the Middle East, Greece, Turkey and Armenia. His use of spice, texture and incredible local produce are testament to his palate and skill as a chef.
Late summer is a favourite time of year for many chefs and guests can also expect to try dishes such as heirloom tomatoes served with homemade shanklish, BBQ bullhorn peppers with labne and chilli butter, and Lebanese zucchini filled with lamb, onions and spices.
Drinks will be as fascinating and flavour-forward as the food, with an arak service, Armenian wines, Tom’s Lebanese lemonade and cocktails to round out the offering.
